Shrimp Po Boy

Preparation

    Prepare the Spicy Garlic Aioli

    In a bowl, combine mayonnaise, minced garlic, hot sauce, salt, and black pepper. Mix well until smooth. Adjust seasoning to taste. Set aside.

    Cook the Shrimp

    Toss the shrimp with blackening seasoning, olive oil, salt, and black pepper. Heat a skillet over medium-high heat and add the seasoned shrimp. Cook for about 2-3 minutes on each side or until the shrimp are cooked through and have a nice blackened crust. Remove from heat.

    Prepare the Hoagie

    Cut the hoagie rolls open and lightly toast them. Spread a generous amount of spicy garlic aioli on the inside of each roll.

    Assemble the Po Boy

    Layer lettuce and sliced tomatoes on the bottom of each hoagie roll. Add the cooked shrimp on top, then finish with more spicy garlic aioli if desired.

    Serve

    Serve the shrimp po boys with your choice of side, such as fries or coleslaw.
