Prepare the Meat
If using BBQ brisket, slice it into thin pieces. If using blackened or fried catfish, prepare it as per your preferred method.

Assemble the Po' Boy
Slice the French bread or po' boy rolls lengthwise, but do not cut all the way through. Spread a generous amount of remoulade sauce on both sides of the bread.

Add the Filling
Layer the sliced brisket or catfish, followed by lettuce, tomato, and onion. Season with salt and pepper to taste.

Serve
Close the sandwich and serve immediately. Enjoy your classic po' boy!
