Prepare the Steak
Take the ribeye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking.

Season the Steak
Rub both sides of the steaks with olive oil, and then generously season with salt and black pepper. Add fresh rosemary on top.

Prepare the Potatoes
Peel the potatoes and cut them into thick strips to create chips. Rinse them under cold water to remove excess starch.

Soak the Potatoes
Soak the potato strips in water for about 30 minutes. This helps to make them crispier when fried.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of potato; it should sizzle immediately.

Fry the Chips
Drain the soaked potato strips and pat them dry with a kitchen towel. Carefully add them to the hot oil in batches, frying for about 5-7 minutes until golden brown and crispy.

Drain and Season the Chips
Once fried, remove the chips from the oil using a slotted spoon and drain on paper towels. Season with salt to taste while they are still hot.
