Set Up Breading Station
In one bowl, place the all-purpose flour mixed with salt, black pepper, and smoked paprika. In a second bowl, beat the eggs. In a third bowl, add the panko breadcrumbs.

Coat the Vegetables
Take each cubed vegetable piece, dip it first in the flour mixture, then in the beaten eggs, and finally coat it in panko breadcrumbs. Set aside on a plate.

Heat the Oil
In a large skillet or frying pan, heat vegetable oil over medium-high heat until hot.

Fry the Vegetables
Once the oil is hot, carefully add the breaded vegetables in batches, ensuring not to overcrowd the pan. Fry for 3-4 minutes or until golden brown. Use a slotted spoon to remove them and place on paper towels to drain excess oil.

Arrange the fried vegetables on a serving platter, sprinkle with chopped fresh parsley, and serve with cubed smoked mozzarella cheese on the side.
