Preparing the Smoked Mozzarella

Cut the Cheese
Cube the smoked mozzarella cheese into bite-sized pieces, approximately 1-inch cubes.

Set Up Breading Station
In three separate shallow bowls, place the flour seasoned with salt and pepper in one, beaten eggs in the second, and panko breadcrumbs in the third.
Breading the Cheese

Coat the Cheese
Take each mozzarella cube, dredge it in the flour, then dip it in the beaten eggs, and finally coat it in the panko breadcrumbs. Ensure each cube is well coated.
Frying the Cheese

Heat the Oil
In a large heavy-bottomed pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Mozzarella
Carefully place the breaded mozzarella cubes in the hot oil, a few at a time, and fry for about 2-3 minutes or until golden brown. Turn them occasionally for even cooking.

Drain the Cheese
Once golden brown, remove the mozzarella cubes from the oil and place them on a plate lined with paper towels to drain excess oil.

Add Tomatoes and Season
Add the canned crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir well to combine.

Simmer the Sauce
Let the sauce simmer for about 15 minutes on low heat. Stir occasionally and add fresh basil leaves just before serving.
