Prepare Scallops

Clean and Season
Rinse the jumbo sea scallops under cold water and pat dry with paper towels. Season both sides with salt, black pepper, and lemon juice. Let it marinate for 15 minutes.

Set Up Breading Station
In three separate shallow bowls, place the all-purpose flour in the first, beat the eggs with milk in the second, and pour the Hawaiian style panko breadcrumbs into the third.
Frying Scallops

Heat Oil
In a large pot or deep frying pan, heat 2 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread Scallops
Take each scallop and dredge it in the flour, shaking off the excess. Then dip it in the egg mixture, and finally coat it with panko breadcrumbs, pressing gently to adhere.

Cut Potatoes
Peel the russet potatoes and cut them into thick chips (about 1/2 inch thick).

Fry Chips
In a separate pot, heat 2 cups of vegetable oil over medium-high heat. Once hot, add the potato chips in batches and fry them for 5-7 minutes or until golden and crispy. Remove and drain on paper towels. Sprinkle with salt immediately.
