Method

Preparation

  1. 1

    Prepare the Cucumbers

Wash the cucumbers thoroughly under cold water to remove any dirt. Slice them into spears or rounds based on your preference. You can also leave them whole if using smaller varieties.

  2. 2

    Prepare the Garlic and Dill

Peel the garlic cloves and set them aside. Rinse the fresh dill under cold water and pat it dry.

Brine

  1. 3

    Make the Brine

In a medium saucepan, combine 2 cups of water, 1 cup of white vinegar, 1 tablespoon of salt, and 1 tablespoon of sugar. Add 1 teaspoon of black peppercorns, 1 teaspoon of mustard seeds, and 1 teaspoon of red pepper flakes. Bring the mixture to a boil over medium heat, stirring occasionally until the salt and sugar dissolve.

  2. 4

    Cool the Brine

Once boiling, remove the saucepan from heat and let the brine cool to room temperature.

Pickling

  1. 5

    Pack the Jars

In clean, sterilized jars, place the sliced cucumbers, garlic cloves, and fresh dill. Pack the cucumbers tightly but not so much that they bruise.

  2. 6

    Add the Brine

Once the brine has cooled, pour it over the packed cucumbers, ensuring they are completely submerged. Leave about half an inch of space at the top of the jar.

  3. 7

    Seal and Store

Seal the jars with lids and refrigerate. Allow the pickles to marinate for at least 24 hours before consuming for the best flavor.
