Preparation of Vegetables

    Prepare the Vegetables

    Wash and cut the zucchini, carrot, and bell pepper into bite-sized pieces. Clean the mushrooms and cut them in half. Cut the broccoli into small florets.

Batter and Crust

    Make the Batter

    In a bowl, whisk together the all-purpose flour, salt, black pepper, garlic powder, and paprika.

    Prepare the Egg Mixture

    In another bowl, whisk the eggs and water together until well combined.

    Prepare the Panko Crust

    In a third bowl, place the panko bread crumbs.

Frying

    Heat the Oil

    In a deep pan or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Vegetables

    Dip each piece of prepared vegetable in the flour mixture, then into the egg mixture, and finally coat them in panko bread crumbs.

    Fry the Vegetables

    Carefully place the coated vegetables in the hot oil, frying them in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes per batch.

    Drain and Serve

    Remove the fried vegetables from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauce.
