Prep the Potatoes

    Wash and Cut

    Wash the Russet potatoes thoroughly under cold water to remove any dirt. Peel the potatoes if desired, then cut them into uniform sticks, about 1/4 to 1/2 inch thick.

    Soak in Water

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

Fry the Potatoes

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C). Use a thermometer for accuracy.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove as much moisture as possible.

    Fry the Potatoes

    Carefully add a batch of the dried potato sticks into the hot oil, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy.

    Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain any excess oil.
