For the Fish Cakes

Prepare the Potatoes
Boil the chopped potatoes in salted water until tender, about 15 minutes. Drain and allow to cool slightly.

Cook the Fish
Poach the fish fillets in simmering water for about 10 minutes or until cooked through. Remove from water and flake into large pieces.

Mix Ingredients
In a large bowl, combine the flaked fish, cooked potatoes, chopped green onions, beaten egg, bread crumbs, dijon mustard, lemon juice, salt, and black pepper. Mix until well combined.

Shape the Fish Cakes
Divide the mixture into equal portions and shape each into a patty, about 1 inch thick.

Fry the Fish Cakes
Heat olive oil in a large skillet over medium heat. Fry the fish cakes for about 4-5 minutes on each side, or until golden brown and crispy.

Combine Ingredients
In a bowl, mix together mayonnaise, finely chopped pickles, capers, lemon juice, salt, and black pepper until well combined.

Taste the tartare sauce and adjust seasoning with additional salt and pepper to your liking.
