    Choose Your Fish

    Select 3 pieces of fresh fish fillets of your choice. Good options include cod, tilapia, or haddock.

    Prepare the Batter

    In a mixing bowl, combine 1 cup of all-purpose flour, 1 cup of cornstarch, 1 tsp of baking powder, 1 tsp of salt, and 1 tsp of black pepper. Whisk together until well mixed.

    Add Cold Water

    Gradually add 1 cup of cold water to the dry ingredients while whisking. Continue mixing until you have a smooth batter with no lumps.

Frying

    Heat the Oil

    In a large frying pan or deep fryer, heat 2 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small amount of batter into the oil; it should sizzle and rise to the surface.

    Coat the Fish

    Dip each piece of fish fillet into the batter, ensuring it's fully coated.

    Fry the Fish

    Carefully place the battered fish into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and crispy. Do not overcrowd the pan; fry in batches if necessary.

    Drain Excess Oil

    Once cooked, remove the fish from the oil and place on a plate lined with paper towels to absorb excess oil.

Serving

    Serve the fried fish hot, garnished with lemon wedges or your favorite dipping sauce.
