Prepare the Calamari

    Season the Calamari

    In a mixing bowl, combine the cleaned calamari strips with salt, black pepper, and lemon juice. Toss well to coat the calamari evenly. Let it marinate for 15 minutes.

Prepare the Breading

    Set Up Breading Station

    In three separate shallow bowls, place the flour, beaten eggs, and a mixture of panko breadcrumbs, cornstarch, garlic powder, and paprika.

    Bread the Calamari

    Take each calamari strip, dip it first into the flour, shaking off excess, then into the beaten eggs, and finally into the panko mixture, pressing gently to adhere. Set the breaded calamari aside on a plate.

Prepare the Chips

    Fry the Chips

    In a large pot, heat vegetable oil over medium-high heat until it reaches 180°C (350°F). Carefully add the cut potatoes in batches, making sure not to overcrowd the pot. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Sprinkle with salt while still hot.

    In the same pot with hot oil, carefully add the breaded calamari in batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.

Serve

    On a serving platter, arrange the fried calamari and chips. Garnish with chopped parsley and lemon wedges. Serve immediately.
