Prepare the Filling

Chop and Mix Ingredients
In a mixing bowl, add the chopped Ahi tuna, green onion, carrot, cucumber, soy sauce, sesame oil, lime juice, salt, and black pepper. Mix thoroughly until all ingredients are well combined.
Wrap the Lumpia

Assemble the Spring Rolls
Take a spring roll wrapper and place it on a clean, dry surface with one corner facing you. Spoon about 2 tablespoons of the filling mixture onto the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the top corner with a bit of water. Repeat with remaining wrappers and filling.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Lumpia
Carefully add the wrapped lumpia to the hot oil, frying in batches if necessary to avoid crowding. Fry until golden brown and crispy, about 3-4 minutes per side. Use a slotted spoon to remove them from the oil and drain on paper towels.

In a small bowl, combine soy sauce with Sriracha to taste. Adjust the spice level according to your preference.
