Method
Prepare the Ahi Filling

Chop Ahi Tuna
Cut the Ahi tuna into small, bite-sized pieces and place in a mixing bowl.

Add Aromatics
Mince the garlic and ginger, then add them to the bowl with the Ahi. Also add soy sauce, sesame oil, and chopped green onions. Season with salt and pepper to taste.

Mix Filling
Gently mix all the ingredients together until well combined. Set aside.
Assemble the Spring Rolls

Prepare Wrappers
Lay a spring roll wrapper on a clean surface, with one corner pointing towards you.

Fill Wrapper
Place about 2 tablespoons of the Ahi filling near the corner closest to you.

Roll and Seal
Fold the corner over the filling, then fold in the sides and roll away from you, sealing the edge with a beaten egg.
Fry the Spring Rolls

Heat Oil
In a deep pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry Rolls
Carefully place a few spring rolls into the hot oil, being careful not to overcrowd the pan. Fry for about 3-4 minutes until golden brown.

Drain and Serve
Remove the fried spring rolls and drain on paper towels. Serve hot with a dipping sauce of your choice.
