Dipping Sauce

Method

Preparation of Calamari

  1. 1

    Clean the Calamari

Rinse the fresh calamari under cold water. Cut the tentacles from the body and slice the body into rings, about 1/2 inch thick. Pat dry with paper towels.

  2. 2

    Prepare the Coating

In a large bowl, mix together all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. In a separate bowl, whisk together the eggs and milk until smooth.

Frying the Calamari

  1. 3

    Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 4

    Coat the Calamari

Dip the calamari rings and tentacles into the egg and milk mixture, then coat them in the flour mixture, ensuring they are fully covered.

  3. 5

    Fry the Calamari

Carefully place the coated calamari into the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.

  4. 6

    Drain the Calamari

Using a slotted spoon, remove the fried calamari from the oil and place on paper towels to drain excess oil.

Preparing the Dipping Sauce

  1. 7

    Mix the Sauce

In a small bowl, combine the mayonnaise, ketchup, lemon juice, and hot sauce. Stir until well mixed.

Serving

  1. 8

    Plate and Serve

Arrange the crispy calamari on a serving plate and serve hot alongside the dipping sauce.
