Method

Crust Preparation

  1. 1

    Preheat the oven

Preheat your oven to 350°F (175°C).

  2. 2

    Mix crust ingredients

In a mixing bowl, combine 1.5 cups of graham cracker crumbs, 0.25 cups of granulated sugar, and 0.5 cups of melted unsalted butter. Stir until well combined.

  3. 3

    Form the crust

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

  4. 4

    Bake the crust

Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool.

Filling Preparation

  1. 5

    Beat the cream cheese

In a large mixing bowl, beat 16 oz of softened cream cheese until smooth and creamy using an electric mixer.

  2. 6

    Add sugar and vanilla

Gradually add 1 cup of granulated sugar and 1 tsp of vanilla extract, and continue to beat until combined.

  3. 7

    Incorporate sour cream

Add 1 cup of sour cream to the mixture and beat until fully incorporated.

  4. 8

    Add eggs

Add 3 large eggs, one at a time, mixing well after each addition until the mixture is smooth.

  5. 9

    Pour the filling

Pour the cream cheese filling over the cooled crust in the springform pan.

Baking and Cooling

  1. 10

    Bake the cheesecake

Bake the cheesecake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly.

  2. 11

    Cool and chill

Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour. Then remove it and refrigerate for at least 4 hours or overnight.

Topping Preparation

  1. 12

    Prepare strawberries

In a bowl, toss 2 cups of sliced fresh strawberries with 2 tablespoons of powdered sugar. Allow them to sit for 10-15 minutes until they release their juices.

  2. 13

    Whip the cream

In a mixing bowl, whip 1 cup of heavy cream with 0.5 tsp of vanilla extract until soft peaks form.

  3. 14

    Assemble the topping

Top the chilled cheesecake with the macerated strawberries and dollops of whipped cream before serving.
