Method

Cooking the Pasta

    Boil the Water

    Fill a large pot with water, add a generous amount of salt, and bring it to a boil over high heat.

    Cook the Spaghetti

    Once the water is boiling, add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining the spaghetti, reserve about 1 cup of the pasta cooking water. Drain the spaghetti and set aside.

Making the Sauce

    Cook the Pancetta

    In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat.

    Prepare the Egg Mixture

    In a mixing bowl, whisk together the eggs, grated Parmesan cheese, heavy cream, and black pepper until well combined.

Combining Everything

    Combine Pasta and Pancetta

    Add the drained spaghetti to the skillet with the pancetta. Toss to combine and let cool slightly for about 1 minute.

    Add Egg Mixture

    Slowly pour the egg mixture over the spaghetti, stirring quickly to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Season and Garnish

    Taste and adjust seasoning with salt and additional black pepper if needed. Serve immediately, garnished with chopped fresh parsley.
