Dough Preparation

    Activate the Yeast

    In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

    Mix the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a dough starts to form.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until it is smooth and elastic.

    Let the Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour or until it has doubled in size.

Topping Preparation

    Prepare Tomato Sauce

    If you are using a store-bought tomato sauce, skip this step. Otherwise, simmer crushed tomatoes with some salt and herbs for about 20 minutes.

    Prepare Cheese and Basil

    Slice the fresh mozzarella into 1/4 inch thick slices. Rinse and pat dry the fresh basil leaves.

Pizza Assembly and Baking

    Preheat the Oven

    Preheat your oven to 475°F (245°C) and place a pizza stone or baking tray inside to heat.

    Shape the Dough

    Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a 12-inch circle.

    Assemble the Pizza

    Transfer the shaped dough to a floured pizza peel or baking sheet. Spread the tomato sauce evenly over the dough, leaving a small border. Arrange the mozzarella slices on top and sprinkle with salt and pepper.

    Bake the Pizza

    Carefully slide the pizza onto the preheated stone or tray. Bake for about 12-15 minutes until the crust is golden and the cheese is bubbly.

    Finish with Basil

    Remove the pizza from the oven. Drizzle with olive oil and scatter fresh basil leaves on top. Let it cool for a minute before slicing.
