Pork Ribeye

Prepare the Pork Ribeye
Season the pork ribeye with salt and black pepper on both sides. Allow it to marinate for at least 30 minutes.

Fire-Roast the Pork
Soak the maple plank in water for at least 1 hour. Preheat the grill to medium heat. Place the soaked maple plank on the grill for 5 minutes until it starts to smoke. Place the seasoned pork ribeye on the plank and close the grill lid. Cook for 15-20 minutes, turning halfway through, until the internal temperature reaches 145°F.

Rest the Pork
Remove the pork from the grill and let it rest for 5 minutes before slicing.
Bourbon Bacon Jam

Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels, then chop into small pieces.

Make the Jam
Add the chopped bacon back into the skillet along with brown sugar, bourbon, balsamic vinegar, and minced garlic. Cook for an additional 10 minutes, stirring occasionally, until the mixture thickens.

Steam the Broccoli
In a steamer basket over boiling water, steam the broccoli florets for about 5-7 minutes until bright green and tender.
