Prepare the Mash
In a large mash tun, combine the corn, barley, and rye. Add 300 ml of water and heat the mixture to 150°F (65°C). Stir occasionally for about 1 hour to convert the starches into sugars.

Cool the Mash
After an hour, cool the mash to around 70°F (21°C) to prevent killing the yeast.
Fermentation

Add Yeast
Once cooled, transfer the mash into a fermentation vessel. Sprinkle 1 tsp of distiller's yeast over the top of the mash. Stir gently to incorporate.

Ferment
Seal the fermentation vessel with an airlock and let it ferment for 5 to 7 days at a stable temperature of around 70°F (21°C) until fermentation bubbles cease.
Distillation

Distill the Wash
After fermentation, transfer the wash to a still. Heat the still gently to distill the alcohol. Collect the distillate until you reach the desired proof.
Aging

Age the Bourbon
Fill 2 charred oak barrels with the distilled spirit. Seal the barrels and let them age for a minimum of 2 years, allowing the bourbon to develop its flavor profile.
