Method
Making the Limoncello
- 1
Prepare the Lemons
Wash the lemons thoroughly under cold water to remove any wax or impurities. Pat them dry with a clean towel.
- 2
Zest the Lemons
Using a vegetable peeler or zester, carefully remove the zest from the lemons. Make sure to avoid the bitter white pith underneath the zest.
- 3
Infuse the Vodka
In a large glass jar or container, combine the lemon zest and vodka. Seal the container tightly and let it infuse in a cool, dark place for at least 1 week (or up to 4 weeks for a stronger flavor). Shake the jar gently every few days to mix the ingredients.
- 4
Prepare the Simple Syrup
After the infusion period, combine the granulated sugar and water in a saucepan over medium heat. Stir until the sugar is completely dissolved. Allow the syrup to cool to room temperature.
- 5
Combine and Strain
Once the syrup has cooled, strain the lemon-infused vodka through a fine mesh strainer or cheesecloth into a large bowl. Discard the lemon zest. Mix the strained vodka with the simple syrup and stir well.
- 6
- 7
Chill and Serve
Refrigerate the bottled limoncello for at least 24 hours before serving. Serve chilled in small glasses as a digestif.
Storing the Limoncello
- 8
Store Properly
Store the limoncello in the freezer for an extra chill or in the refrigerator. It can last for up to 2 years if properly sealed.
