Method

Preparing the Salmon

    Soak Cedar Plank

    Soak the cedar plank in water for at least 1 hour to prevent it from burning while grilling.

    Prepare Salmon

    Preheat your grill to medium-high heat. Season the salmon fillets with salt and black pepper.

    Grill Salmon

    Place the soaked cedar plank on the grill for about 3-5 minutes until it starts to smoke. Lay the salmon fillets skin-side down on the plank and close the grill lid. Grill for approximately 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.

    Remove Salmon

    Carefully remove the cedar plank from the grill using tongs and let the salmon rest for a few minutes before flaking it into bite-sized pieces.

Assembling the Salad

    Prepare Vegetables

    While the salmon is grilling, wash and dry the arugula. Slice the cucumber into thin rounds, halve the cherry tomatoes, and thinly slice the red onion.

    In a large bowl, combine the arugula, cucumber, cherry tomatoes, and red onion. Gently toss together.
