Method

Preparation of Flavoring

    Prepare Citrus Peels

    Using a vegetable peeler, carefully remove the peels from the oranges and lemons, avoiding the white pith. Chop the peels into small pieces.

    Crush Coffee Beans

    Lightly crush the coffee beans using a mortar and pestle or a rolling pin. They should be broken but not powdered.

    Mix Herbs

    In a bowl, combine the dried herbs (thyme, mint, and rosemary) together and set aside.

Infusion Process

    Combine Ingredients

    In a large glass jar, combine the Averna Amaro, prepared citrus peels, crushed coffee beans, and mixed dried herbs.

    Prepare Sugar Syrup

    In a saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar is fully dissolved. Allow to cool.

    Add Sugar Syrup

    Once the sugar syrup has cooled, add it to the jar with the Averna mixture. Stir well to combine.

Maturation

    Seal and Store

    Seal the jar tightly and store it in a cool, dark place for at least 2 weeks. Shake the jar gently every few days to help with the infusion process.

    Taste Test

    After 2 weeks, taste the Averna Amaro. If you desire a stronger flavor, let it infuse for an additional week. Strain out the solids before serving.
