Method

Salad Preparation

  1. 1

    Prepare the Salad Base

In a large salad bowl, add the arugula. Rinse and dry the arugula leaves if necessary.

  2. 2

    Slice the Tomatoes

Wash the tomatoes and slice them into wedges. Add them to the bowl with arugula.

  3. 3

    Slice the Red Onion

Peel the red onion and slice it thinly. Add the slices to the salad bowl.

Sweet Onion Jam Preparation

  1. 4

    Cook the Sweet Onion Jam

In a saucepan, combine the diced sweet onions, brown sugar, apple cider vinegar, salt, and black pepper. Cook over medium heat until the onions are soft and caramelized, about 15-20 minutes. Stir occasionally.

  2. 5

    Cool the Jam

Once the onions are caramelized, remove from heat and let cool to room temperature before using.

Garlic Aioli Preparation

  1. 6

    Prepare the Garlic Aioli

In a mixing bowl, combine mayonnaise, minced garlic cloves, lemon juice, salt, and black pepper. Mix well until smooth and creamy.

  2. 7

    Let it Rest

Cover the aioli and let it rest in the refrigerator for at least 30 minutes to let the flavors meld.

Final Assembly

  1. 8

    Assemble the Salad

Once the sweet onion jam and garlic aioli are ready, spoon the onion jam over the arugula and tomato salad.

  2. 9

    Serve with Aioli

Serve the salad topped with a drizzle of garlic aioli. Enjoy your Arugula Tomato Red Onion salad!
