Preparation of Herbal Infusion

    Combine the Herbs

    In a large glass jar, combine the dried gentian root, dried orange peel, dried wormwood, star anise, cloves, cinnamon stick, and cardamom pods.

    Add Alcohol

    Pour the high-proof vodka or grain alcohol over the herbs in the jar, ensuring all herbs are submerged. Seal the jar tightly.

    Infusion Period

    Let the mixture infuse in a cool, dark place for 2 to 4 weeks. Shake the jar gently every few days to help the infusion process.

Finishing the Amaro

    Strain the Infusion

    After the infusion period, strain the mixture through a fine mesh strainer or cheesecloth into another clean jar to remove the solid herbs.

    Prepare Simple Syrup

    In a small saucepan, combine water and sugar over medium heat, stirring until the sugar is completely dissolved. Allow to cool.

    Combine Infusion and Syrup

    Mix the strained herbal infusion with the prepared simple syrup in a larger container. Taste and adjust sweetness by adding honey if desired.

    Bottle the Amaro

    Pour the finished Amaro into sterilized bottles. Seal tightly and label.
