    Marinate the Steak

    In a bowl, combine the skirt steak with the chela marinade. Ensure the steak is fully coated. Cover and refrigerate for at least 1 hour or overnight for better flavor.

    Grill the Steak

    Preheat the grill to medium-high heat. Remove the steak from the marinade and grill for about 4-5 minutes on each side or until cooked to your desired doneness. Allow the steak to rest for 5 minutes before slicing.

    Prepare the Fillings

    While the steak is grilling, prepare the other fillings. Slice the grilled onion and avocado into thin slices. Rinse and drain the black beans if using canned, and set aside.

    Assemble the Burrito

    On a large flour tortilla, layer the sliced skirt steak, queso Chihuahua, black beans, romaine lettuce, sliced avocado, grilled onion, banana peppers, and a dollop of sour cream.

    Wrap the Burrito

    Fold the sides of the tortilla inward, then roll it tightly from the bottom to the top to encase all the fillings. Repeat with the remaining tortillas.
