Mole Rojo Preparation

    Prepare the Chiles

    Remove the stems and seeds from the dried ancho chiles. Soak them in warm water for about 15 minutes until soft.

    Blend the Sauce

    In a blender, combine the soaked chiles, tomatoes, garlic, onion, broth, cumin, cinnamon, and salt. Blend until smooth.

    Cook the Mole

    In a saucepan, heat the olive oil over medium heat. Add the blended mixture and simmer for 20 minutes, stirring occasionally.

    Prepare the Mushrooms

    Slice the shiitake mushrooms and chayote. Chop the onion.

    Sauté the Vegetables

    In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the shiitake mushrooms and chayote, season with salt, and cook until tender, about 10 minutes.

Chochoyotes Preparation

    Make the Dough

    In a bowl, mix the mashed potatoes, corn flour, and salt. Gradually add water until a soft dough forms.

    Shape and Cook

    Shape the dough into small balls and cook them in boiling water for about 5 minutes or until they float.

Spiced Nuts Preparation

    Prepare the Nuts

    In a bowl, mix the mixed nuts with olive oil, cumin, paprika, and salt.

    Roast the Nuts

    Spread the spiced nuts on a baking sheet and roast in the oven at 350°F (175°C) for about 10-12 minutes until golden.

Assembly

    Combine and Serve

    On a large plate, layer the sautéed vegetables, drizzle with mole rojo, add the cooked chochoyotes, and sprinkle with spiced nuts. Garnish with fresh cilantro and mint.
