Prepare the Chicken

Season the Chicken
Pat the Amish country chicken dry with paper towels. Season the inside and outside of the chicken generously with salt and black pepper.

Sear the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the chicken and sear on all sides until golden brown, about 5-7 minutes per side.

Cook the Chicken
Transfer the seared chicken to a baking dish and roast in a preheated oven at 375°F (190°C) for 1 hour, or until the internal temperature reaches 165°F (74°C).
Make the Garlic Creamy Salsa

Roast the Garlic
In the same skillet used for the chicken, add the garlic cloves and cook over medium heat until golden brown and fragrant, about 5-7 minutes. Remove from heat and let cool.

Blend the Salsa
In a blender, combine the roasted garlic, sour cream, mayonnaise, lime juice, fresh cilantro, and cumin. Blend until smooth and creamy. Taste and adjust seasoning if necessary.
Prepare the Herb Salad

Combine Salad Ingredients
In a large bowl, toss the mixed greens, cherry tomatoes, and thinly sliced red onion together.

Plate the Dish
Once the chicken is cooked, let it rest for 10 minutes before carving. Serve the chicken smothered in garlic creamy salsa along with the herb salad on the side. Garnish with lime wedges.
