Preparation of Beans

    Soak the Beans

    Rinse the black beans under cold water and place them in a large bowl. Cover the beans with water and let them soak overnight.

    Cook the Beans

    Drain the soaked beans and transfer them to a large pot. Add 4 cups of fresh water and 1 tsp of salt. Bring the water to a boil, then reduce heat to low. Cover and simmer for about 1 to 1.5 hours, or until the beans are tender. Drain and set aside.

Frying the Beans

    Sauté Aromatics

    In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until translucent. Add the minced garlic and continue to sauté for 1 more minute.

    Add Beans and Spices

    Add the cooked black beans to the skillet along with cumin and black pepper. Stir to combine and cook for an additional 5-7 minutes, allowing the flavors to meld and the beans to become slightly crispy.

    Finish and Serve

    Remove the skillet from heat and drizzle with lime juice. Mix well and serve hot as a side dish or main course.
