Crust Preparation

    Make the Crust

    In a mixing bowl, combine the sorghum flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together.

    Shape the Crust

    Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Pre-bake the Crust

    Preheat the oven to 350°F (175°C). Roll out the dough on a floured surface to fit your pie pan. Place the dough in the pan and prick the bottom with a fork. Bake for 15 minutes until lightly golden. Remove from the oven and set aside.

Flan Preparation

    Prepare the Caramel

    In a saucepan over medium heat, melt the sugar for caramel until it turns golden brown. Quickly pour it into the bottom of the pre-baked crust, tilting to coat the bottom evenly. Allow to cool and harden.

    Mix the Flan Filling

    In a blender, combine cream cheese, sweetened condensed milk, evaporated milk, eggs, and vanilla extract. Blend until smooth and creamy.

    Bake the Flan

    Pour the flan mixture over the hardened caramel in the crust. Bake in a water bath at 350°F (175°C) for 50-60 minutes or until set. A knife inserted should come out clean.

    Cool the Flan

    Remove from the oven and allow to cool at room temperature. Refrigerate for at least 4 hours, preferably overnight before serving.

    Prepare Apples

    Peel, core, and slice the apples into thin wedges.

    Cook Apples

    In a skillet, melt the butter over medium heat. Add the apples, sugar, and cinnamon. Cook until the apples are soft and caramelized, about 10-15 minutes.

    Serve

    Top the chilled flan with the caramelized apples before serving.
