Tortilla Preparation

    Make the Dough

    In a large bowl, combine masa harina, water, and salt. Mix until a smooth dough forms.

    Shape the Tortillas

    Divide the dough into small balls (about the size of a golf ball). Using a tortilla press or rolling pin, flatten each ball between two pieces of plastic wrap to form thin tortillas.

    Cook the Tortillas

    Heat a skillet over medium heat. Cook each tortilla for about 1-2 minutes on each side until lightly browned. Remove from skillet and set aside.

    Add Cheese

    While the tortillas are still warm, sprinkle Chihuahua cheese on one side of each tortilla and fold in half, pressing gently to adhere.

Filling Preparation

    Prepare Nopales

    If using fresh nopales, clean and slice them into thin strips. Boil in salted water for 10-15 minutes until tender. Drain and cool.

    Chop Vegetables

    Finely chop the red onion, dice the tomato, and tear the lettuce into bite-sized pieces.

Cured Cactus Salsa Preparation

    Mix Salsa Ingredients

    In a bowl, combine the cured cactus, lime juice, chopped cilantro, and minced jalapeño. Stir well to combine.

Assembly

    Assemble the Tacos

    Take a tortilla filled with melted cheese and add a layer of nopales, red onion, tomato, and lettuce hearts. Top with the cured cactus salsa.

    Serve

    Serve the tacos warm with additional salsa on the side if desired.
