Roasting the Beef
Preheat your oven to 350°F (175°C). Season the prime beef roast with salt and black pepper. Place it in a roasting pan and roast for approximately 1.5 hours, or until it reaches your desired doneness.

Cut the Kennebec potatoes into fries. In a large bowl, toss the fries with olive oil and salt. Arrange them on a baking sheet and bake in the oven at 425°F (220°C) for 30-35 minutes, turning occasionally, until crispy.

Final Assembly
Slice the roasted beef thinly. Layer the beef on the ciabatta rolls, top with caramelized onions and cave-aged cheddar. Serve with the warm au jus on the side for dipping and the fries on the side.
