Prepare the Sauerkraut

Cook the Ham Hock

In a large pot, combine sauerkraut, ham hock, juniper berries, bay leaf, caraway seeds, and water. Bring to a boil, then reduce heat and simmer for about 1.5 hours until the ham hock is tender.

Shred the Ham Hock

Once cooked, remove the ham hock from the pot, let it cool slightly, and then shred the meat. Return the shredded ham to the pot and stir well.

Make the Sauce Charcutière

Prepare the Sauce

In a saucepan, melt unsalted butter over medium heat. Add chopped shallots and cook until translucent. Stir in Dijon mustard and white wine. Reduce the sauce by half, then mix in chopped cornichons, capers, and chervil. Set aside.

Cook the Pork Chops

Sear the Pork Chops

Season the Duroc pork chops with salt and black pepper. In a skillet, heat olive oil over medium-high heat. Sear the pork chops for 4-5 minutes on each side until browned and cooked through.

Serve

Plate the Dish

On each plate, serve a portion of sauerkraut topped with the shredded ham hock. Place the pork chop on the side and drizzle with sauce charcutière.
