Lion's Mane Mushroom Preparation

    Sauté the Mushrooms

    In a skillet, heat olive oil over medium heat. Add Lion's Mane mushrooms, salt, and black pepper. Sauté for about 5-7 minutes until golden and tender. Remove from heat and set aside.

Brandy Peppercorn Sauce Preparation

    Make the Sauce

    In the same skillet, melt butter over medium heat. Add minced garlic and shallots, sauté until translucent. Pour in brandy and allow it to reduce by half. Stir in heavy cream and crushed black peppercorns. Simmer for 5-10 minutes until thickened. Season with salt to taste.

Twice Baked Potato Preparation

    Bake the Potatoes

    Preheat oven to 400°F (200°C). Prick the potatoes with a fork, place on a baking sheet, and bake for 45-60 minutes until tender. Let cool slightly.

    Prepare the Filling

    Cut the potatoes in half lengthwise and scoop out the insides into a bowl. Mix with butter, heavy cream, chopped chives, salt, and black pepper until creamy.

    Bake Again

    Spoon the mixture back into the potato skins. Place back in the oven and bake for an additional 15-20 minutes until heated through and slightly golden.
