Crust Preparation

    Make the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 8-10 minutes or until lightly golden. Set aside to cool.

    Prepare the filling

    In a large mixing bowl, beat together mascarpone cheese and cream cheese until smooth. Add honey, vanilla extract, eggs, and lemon juice. Mix until well combined and creamy.

    Combine and bake

    Pour the filling over the cooled crust. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

    Cool and chill

    Remove the cheesecake from the oven and let it cool at room temperature for 1 hour. Then refrigerate for at least 4 hours or overnight.

Serving

    Serve the cheesecake

    Before serving, slice fresh plums and arrange them on top of the cheesecake. Drizzle with honey and garnish with pieces of honeycomb. Slice and enjoy!
