Method

Make the Pastry Dough

  1. 1

    Combine Dry Ingredients

In a large bowl, mix together the all-purpose flour, granulated sugar, and salt.

  2. 2

    Add Butter

Cut the unsalted butter into small pieces and add it to the flour mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

  3. 3

    Add Water

Gradually add the cold water, one tablespoon at a time, mixing until the dough comes together. Do not overwork the dough.

  4. 4

    Chill

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Prepare the Filling

  1. 5

    Mix Filling Ingredients

In a medium bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.

  2. 6

    Add Berries

Gently fold in the fresh berries until evenly distributed.

Assemble and Bake

  1. 7

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 8

    Roll Out Dough

On a floured surface, roll out the chilled pastry dough to about 1/8 inch thick. Cut into desired shapes.

  3. 9

    Fill the Pastries

Place a tablespoon of the cream cheese filling on one half of each pastry shape. Fold over and seal the edges, pressing with a fork.

  4. 10

    Brush with Egg Wash

Brush the tops with beaten egg and sprinkle with sugar.

  5. 11

    Bake

Place the pastries on a baking sheet and bake for 20-25 minutes or until golden brown.

  6. 12

    Cool

Allow the pastries to cool on a wire rack before serving.
