Béchamel Sauce Preparation

    Make the Béchamel Sauce

    In a saucepan over medium heat, melt 2 tablespoons of butter. Stir in the flour and cook for about 1 minute until lightly golden. Gradually whisk in the milk, and continue to cook, whisking constantly until the sauce thickens. Season with salt, black pepper, and nutmeg. Set aside.

Sandwich Assembly

    Assemble the Sandwich

    Spread butter on one side of each slice of levain bread. On the unbuttered side, layer the ham and half of the gruyère cheese, then spoon over some béchamel sauce. Top with the second slice of bread, butter side up.

    Cook the Sandwich

    In a skillet over medium heat, cook the sandwich until golden brown, about 3-4 minutes per side. In the last minute of cooking, sprinkle the remaining gruyère cheese on top and cover to melt.

Fried Egg Preparation

    Fry the Egg

    In a separate skillet, heat a small amount of oil or butter over medium heat. Crack the egg into the skillet, season with salt and pepper, and cook until the whites are set but the yolk is still runny (about 2-3 minutes).

Final Assembly

    Serve the Croque Madame

    Place the sandwich on a plate and top with the fried egg. Serve immediately.
