Cobbler Preparation

    Prepare the Fruit Filling

    In a large bowl, combine sliced peaches and raspberries with granulated sugar. Let it sit for 15 minutes to release juices.

    Make the Brown Butter

    In a saucepan, melt the unsalted butter over medium heat. Cook until it turns a golden brown color and has a nutty aroma. Remove from heat and let it cool slightly.

    Mix the Cobbler Batter

    In another bowl, whisk together gluten-free flour, baking powder, and salt. Add the brown butter, brown sugar, vanilla extract, and eggs. Mix until combined.

Assembly and Baking

    Preheat oven to 350°F (175°C). Spread the fruit mixture in a greased baking dish, then pour the cobbler batter over the top. Bake for 35-40 minutes until golden brown.
