    Cook Quinoa

    Rinse quinoa under cold water. In a pot, combine 1 cup of quinoa with 2 cups of water and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

    Prepare Vegetables

    While the quinoa is cooking, chop the red bell pepper, cucumber, and red onion into small pieces. Halve the cherry tomatoes and rinse the spinach leaves.

    Combine Ingredients

    In a large bowl, combine the cooked quinoa, chickpeas, chopped vegetables, and spinach. Mix well to combine.

    Drizzle with olive oil and lemon juice, then season with salt and pepper to taste. Toss to combine.
