    Prepare the Vegetables

    Chop the bell pepper, tomato, and onion into small pieces. Rinse the spinach and set aside.

    Whisk the Eggs

    In a bowl, crack the eggs and whisk them until fully combined. Add salt and black pepper to taste.

    Cook the Vegetables

    In a non-stick skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 3-4 minutes until softened. Add the spinach and tomato, cooking for an additional 2 minutes.

    Add the Eggs

    Pour the whisked eggs over the sautéed vegetables in the skillet. Allow the eggs to cook undisturbed for about 2-3 minutes, or until the edges start to set.

    Add Cheese and Finish Cooking

    Sprinkle the cheddar cheese on top of the omelet. Carefully fold the omelet in half and let it cook for another minute until the cheese is melted and the eggs are fully set.

    Serve

    Slide the omelet onto a plate and cut in half if desired. Serve hot.
