Sauté the Shrimp and Spinach
In a non-stick skillet, heat the olive oil over medium heat. Add the shrimp and cook until they are pink and opaque, about 3-4 minutes. Add the chopped spinach and cook until wilted, about 1-2 minutes.

Cook the Omelet
Pour the egg mixture over the shrimp and spinach in the skillet. Cook on medium-low heat, gently lifting the edges with a spatula to allow uncooked eggs to flow underneath. Once the bottom is set but the top is slightly runny, sprinkle the feta cheese on one half of the omelet.

Fold and Serve
