Preparation and Assembly

    Prepare the Vegetables

    Wash and slice the zucchini, yellow squash, red bell pepper, and eggplant into 1/4-inch thick slices.

    Grill the Vegetables

    Preheat a grill or grill pan over medium heat. Brush the vegetable slices with olive oil and season with salt and black pepper. Grill each side for about 3-4 minutes until tender and slightly charred.

    Layer the Veggies and Cheese

    On a serving platter, start layering the grilled vegetables with slices of fresh mozzarella cheese and fresh basil leaves. Alternate between the different vegetables and cheese to create a colorful tower.
