Prepare the Egg Whites
In a large bowl, whisk the egg whites until they are frothy. Add salt and black pepper to taste.

Cook the Egg Whites
Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil. Pour half of the egg white mixture into the skillet, swirling to evenly coat the bottom. Cook for 2-3 minutes until set, then carefully flip and cook for another 1-2 minutes. Remove and set aside. Repeat with remaining egg whites.

Sauté the Spinach
In the same skillet, add the remaining tablespoon of olive oil and sauté the fresh spinach until wilted. This should take about 2-3 minutes.

Assemble the Napoleon
On a serving plate, layer the cooked egg whites, sautéed spinach, cherry tomatoes (halved), and crumbled feta cheese. Repeat the layers until all ingredients are used.

Garnish and Serve
Top with fresh basil leaves and drizzle with a little olive oil if desired. Serve immediately.
