    Prepare the Bacon

    In a skillet over medium heat, cook the applewood-smoked bacon until crispy. Remove the bacon from the skillet and let it drain on paper towels. Reserve some bacon fat in the skillet.

    Cook the Grits

    In a saucepan, bring 4 cups of water to a boil. Add the stone-ground grits and stir. Reduce the heat to low, cover, and cook for 20-25 minutes, stirring occasionally, until the grits are thick and creamy.

    Mix in Cream and Mascarpone

    Once the grits are cooked, stir in the heavy cream, mascarpone cheese, salt, and black pepper. Mix until well combined and creamy.

    Add Bacon

    Chop the cooked bacon into small pieces and fold it into the grits, reserving some for garnish.

    Serve

    Spoon the grits into bowls, garnish with diced tomato, remaining bacon pieces, and chopped chives. Serve hot.
