Cook the Oats
In a medium saucepan, bring the water to a boil. Stir in the steel cut oats and salt. Reduce the heat to low, cover, and simmer for about 20-30 minutes, stirring occasionally, until the oats are tender and have absorbed most of the water.

Prepare the Toppings
While the oats are cooking, prepare your toppings by shredding the carrots, measuring out the raisins and chopped pecans, and having the ground cinnamon ready.

Serve
Once the oats are cooked to your desired consistency, remove from heat. Spoon the oatmeal into bowls and top with shredded carrots, raisins, chopped pecans, and a sprinkle of ground cinnamon.
