Make the Pancake Batter
In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt. In a separate bowl, combine the milk, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix; a few lumps are okay.

Prepare the Fruits
Slice the banana and prepare the blackberries, blueberries, and strawberries. You can slice the strawberries if desired.

Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat and melt 1 tablespoon of butter. Pour 1/4 cup of batter onto the skillet for each pancake. Sprinkle the fruits on top of the batter while it's cooking. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side. Repeat with the remaining batter, adding more butter as needed.

Serve
Serve the pancakes warm with additional fresh fruits on top and maple syrup if desired.
