1. Prepare Avocado Mash

In a bowl, mash the avocado with a fork until smooth. Season with salt and pepper to taste.

2. Fry the Bacon

In a skillet over medium heat, cook the applewood-smoked bacon until crispy. Remove and drain on paper towels.

3. Fry the Green Tomatoes

In the same skillet, fry the green tomato slices until golden brown on each side. Drain on paper towels.

4. Fry the Egg

In the same skillet, crack the egg and fry it sunny-side up or to your preference.

5. Assemble the Sandwich

On a slice of pumpernickel bread, layer the avocado mash, fried green tomatoes, crispy bacon, white cheddar cheese, and the fried egg. Top with another slice of pumpernickel bread.
