    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into 1-inch cubes. Place them in a large pot and cover with cold water. Add a pinch of salt and bring to a boil.

    Cook the Potatoes

    Once boiling, reduce the heat and simmer for about 15-20 minutes, or until the potatoes are fork-tender. Drain and let cool.

    Mix the Dressing

    In a large bowl, combine mayonnaise, Dijon mustard, sweet pickle relish, salt, black pepper, and paprika. Mix until well blended.

    Combine Ingredients

    Once the potatoes have cooled, add them to the bowl with the dressing. Then add the diced celery, chopped red onion, and chopped hard-boiled eggs. Gently fold everything together until evenly coated.

    Chill and Serve

    Cover the potato salad and refrigerate for at least 1 hour to let the flavors meld. Before serving, garnish with sliced green onions if desired.
