Prepare the Soft Shell Crabs

Sauté Vegetables
In a pan, melt butter over medium heat. Add onion, garlic, red bell pepper, black-eyed peas, and corn. Season with salt and pepper. Cook until the vegetables are tender, about 10 minutes.
Poach the Eggs

Prepare the Hollandaise Sauce

Whisk Together
In a heatproof bowl, whisk egg yolks and lemon juice. Place over simmering water and whisk until thickened. Gradually add melted butter and Old Bay seasoning while whisking until smooth.
Make the Bacon Onion Jam

Cook Bacon and Onion
In a skillet, cook bacon until crispy. Remove and drain on paper towels. In the same skillet, add onion and cook until caramelized. Stir in Tabasco sauce, brown sugar, and salt. Cook until thickened, about 5 minutes.
