Prepare the soft shell crabs
Clean and remove the gills from the soft shell crabs, then pat them dry with paper towels.

Set up a breading station
In one bowl, place the all-purpose flour seasoned with salt, black pepper, and cayenne pepper. In a second bowl, beat the eggs with buttermilk. In a third bowl, place the cornmeal.

Fry the crabs
Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is hot, carefully add the breaded crabs and fry for about 3-4 minutes on each side until golden brown and crispy. Remove and drain on a paper towel.

Slice the French baguettes open and layer with shredded lettuce, fried soft shell crabs, tomato slices, and generous amounts of remoulade sauce.
